pinwheel cobbler

I'm going to share something delicious & sacred with you today - a recipe handed down from Baine's great-grandmother. The original recipe just uses blueberries, but I mix it up and use peaches sometimes. Or a combination of the 2. Here it is... 

Ingredients:
2 cups sugar
2 cups water
1 tsp vanilla extract
1/2 tsp lemon juice (optional)
2 cups fresh fruit (e.g., berries, peaches)
1 tsp cinnamon (optional)
1 1/2 cup all-purpose flour
2 tsp baking powder
1 tsp salt
1/2 cup shortening (I use Spectrum Organic)
1/3 cup milk
1/2 cup butter
Vanilla Ice Cream

Directions:

1. Combine sugar & water in a saucepan. Stir well. Cook over medium heat, stirring constantly, until sugar dissolves. Stir in vanilla & lemon juice. Set aside.

2. Rinse fruit. Peel & cut peaches into small slices. Add cinnamon and toss it gently into fruit mixture. Set aside.



3. Combine flour, baking powder, & salt in mixing bowl. Mix well. Cut shortening into flour mixture & mix until it resembles coarse meal. Add milk, stirring just until ingredients are moistened. Turn dough onto a lightly floured surface, and knead lightly 4 or 5 times.

  

4. Roll dough to a 12 x 9-inch rectangle. Spread fruit over dough. Roll up, jellyroll fashion, beginning with long side. Set aside. 




5. Melt butter in a 13 x 9 x 2-inch baking dish. Cut dough into 12 (1-inch) slices. (Don't obsess over these exact measurements. I usually end up with 12-15 slices.) Places slices, cut side down, in butter. Then pour sugar syrup around slices in the baking dish. (It's going to look strange - like way too much liquid! Don't worry. You're doing it right.) :)




6. Bake at 350 degrees for 55-60 minutes or until golden brown. (Mine usually takes longer.)

7. Serve WARM with vanilla ice cream.
